A yummy little treat!

This treat was so delicious I just have to share it. My daughter and I were going to a function at our church. They were going to be serving Red Velvet Cake Balls. As any mom I didn’t want my daughter to miss out, so I asked for the recipe and then my daughter and I went to work. The one thing about my 13 year old daughter is that she is an excellent cook, so this was a fun project for us both. We made these and we absolutely love them. They are very easy to make and it didn’t take all that long. So here is the recipe for Gluten Free Cake Balls. They would make an excellent pot luck or holiday treat.

Gluten Free Cake Balls

1 Box Betty Crocker Gluten Free Cake Mix (I used yellow cake mix, but you can use any combination you like).
1 Can Betty Crocker Gluten Free Cream Cheese Frosting (16 oz.) (any flavor will work)
1 Pkg. Chocolate for Dipping (Regular Chocolate, White Chocolate, or Dark Chocolate)

Instructions:

  1. Make cake according to directions on package.
  2. Let cool completely.
  3. Crumble the cake up completely in a large bowl.
  4. Reserve 1/2 a cup to use as garnish.
  5. Mix a can of frosting into the crumbled cake. (It might be easiest to do this with your hands).
  6. Let the mixture chill for approx. 15 min. in freezer.
  7. When chilled roll the mixture into quarter sized balls.
  8. Let the balls chill in freezer for approx. 1 hour.
  9. When balls are ready to dip melt the chocolate in microwave, check and stir every 15 seconds.
  10. Dip the balls into the melted chocolate, remove and place on wax paper and garnish each ball immediately.
  11. Enjoy!!!
