1 Pkg Dry Onion Soup Mix (see recipe below)
17 Glutino Vegetable Crackers
1/2 C Water
2 lbs. Lean Ground Beef
2 Eggs
1 tbsp Butter
Gravy:
4 tbsp Butter
4 tbsp Gluten Free All Purpose Flour
1 1/2 C McKay’s Beef Style Instant Broth & Seasoning or juice from cooking the meatballs.
Salt, Pepper, garlic powder and San-J Tamari Gluten Free Soy Sauce to Taste
2 Pints Whipping Cream
- Mix water with dry onion soup mix and crackers.
- Combine meat, eggs and the mixture above and knead to a smooth mass.
- With damp hands form into 1″ balls.
- Heat the butter in a pan and brown the meatballs on all sides.
- Remove the meatballs and pour in 1 1/2 cups water into the pan to deglaze the pan.
- In a separate pot melt the butter and stir in the flour to make a rue.
- Strain the meat drippings into rue stirring the rue as you go.
- Add salt, pepper, garlic powder and soy sauce to taste.
- Stir until thickened and add whipping cream.
- Pour the gravy over the meatballs and let boil again.
Serve with cooked potatoes, mashed potatoes or egg noodles. In Sweden you serve this dish with Lingonberry Jam.
